Always Winter❄️ But Never Christmas
We Can Be Surprised THROUGH Perseverance?
One Christmas, my daughter and I decided to bake a pink peppermint cake, but we unknowingly made a big mistake. We noticed that the cake hadn’t really risen, and so we let it cook a while longer.
It still hadn’t risen much, so we left it in even longer. Finally, when we realized that something was wrong, we took out a flat pink puck with quite dark edges. We had forgotten the baking powder!
BUT, from that mistake was born the Peppermint Pinkie, a deliciously pepperminty confection with a texture between a brownie and cookie. We spent months trying to recreate that perfect accident.
If we only hang in there, sometimes we make the lemonade. In 2020, I found myself stuck at home teaching my kindergartener how to read, and I developed Jubilant Reader to help her.
